Middle Eastern dip, Baba Ghanoush, is an ideal food to snack on if you want something light and healthy. You can serve it as an alternative to humous or as part of a meze selection.
The key ingredient in Baba Ghanoush is the roasted aubergine or eggplant. The recipe below is a little different than most as rather than baking the aubergines first, they roast them on a gas stove. If you don’t have a gas stove, then you can still roast the aubergines in the oven instead.
Baba Ghanoush is best served with warm flat bread. If you like pomegranate, add a few pomegranate seeds on top of the dip as a garnish.
