Lemongrass is a fragrant herb that adds a refreshing, invigorating and aromatic flavour to food, especially Thai and Malaysian cuisine. It also works wonders in a smoothie.
This banana and lemongrass smoothie adds a zing to the naturally sweet taste of banana. It uses fresh coconut milk, but you can also use whole milk, almond milk and if you desire a creamy textured smoothie, tinned coconut milk will also work.
2 cups of fresh coconut milk
1/2 stalk of fresh lemongrass
1 ripe banana
- Chop the lemongrass stalk as finely as you can
- Mash the banana
- Add the banana, coconut milk and chopped lemongrass in a blender
- Serve chilled. Serves two.
