Recipe: Barbacoa

If you are hosting a New Year’s Eve party and looking for party food ideas, Mexican food is an all rounder from simple snacks to hearty burritos.

Go all out and serve up some traditional barbacoa, which can be used to fill burritos or tacos.

In Mexico, barbacoa is traditionally a preparation of meat that is steam cooked in an underground oven until very tender and succulent. It is a delicious way to serve meat, including beef, lamb or pork.

The barbacoa recipe below requires a slow cooker. Lamb or pork can also be substituted instead of beef.
